Ingredients
  

  • 4 cups pineapple juice fresh or store-bought
  • 2 cups apple cider
  • 1 cup orange juice
  • ½ cup lemon juice
  • 3 cinnamon sticks
  • 6 whole cloves
  • 2- star anise
  • 1- inch piece fresh ginger sliced
  • ¼ cup honey or maple syrup adjust to taste
  • 1 teaspoon ground nutmeg
  • Fresh pineapple slices and cinnamon sticks for garnish

Instructions
 

Prepare the Spices

  • Combine the cinnamon sticks, cloves, star anise, and sliced ginger in a large pot. This will infuse the wassail with signature warming flavors. I always stir occasionally to release all the goodness from the spices.

Add the Juices

  • Pour in the pineapple, apple cider, orange, and lemon juice. These tropical and classic wassail juices will merge to create a rich base. Stir gently to combine everything well.

Sweeten the Mixture

  • Add the honey (or maple syrup) to the pot. I like to taste the mixture at this stage and adjust the sweetness according to my preference. You can always add more honey if you want it sweeter.

Heat the Wassail

  • Bring the mixture to a simmer over medium heat. I let it simmer for about 20 minutes to ensure the spices fully infuse into the juice. Stir occasionally to prevent sticking or burning.

Strain and Serve

  • Once the wassail has simmered, I like to strain out the spices using a fine sieve or cheesecloth to ensure a smooth drink.
