Equipment

  • Tall glass or mason jar
  • Muddler or wooden spoon
  • Measuring spoons
  • Stirrer or spoon
  • Knife and chopping board
  • Citrus squeezer (optional)

Ingredients
  

  • 1 cup fresh pineapple chunks
  • ¼ cup fresh mint leaves
  • ¾ ounce fresh lime juice about half a lime
  • 1 tablespoon lite coconut milk
  • 2 ounces pineapple juice
  • 1 teaspoon brown sugar
  • 2 ounces club soda
  • Ice cubes as needed
  • Lime wedges for garnish
  • Mint sprigs for garnish

Instructions
 

Muddle the Mint & Pineapple:

  • In your glass, add pineapple chunks, mint leaves, lime juice, and brown sugar. Gently muddle with a spoon or muddler to release the mint oils and pineapple juice. Don’t overdo it—you’re not trying to make a puree.

Add Coconut Milk & Juice:

  • Stir in the coconut milk and pineapple juice. Mix well until the coconut milk blends smoothly.

Top with Club Soda:

  • Fill the glass with ice, then pour in the club soda. Give everything a light stir.

Garnish & Serve:

  • Add a lime wedge and a sprig of mint on top. Serve immediately and enjoy every tropical sip!

Notes

If you’re making a batch, just multiply the ingredients. I’ve done this for a party of 10 using a big pitcher and it turned out amazing. Keep the club soda separate and add it just before serving to keep things bubbly.
