Muddle the Berries: Put the 4 raspberries into your shaker. Use a muddler or the back of a spoon to crush them until they are a pulp.
Add the Liquids: Pour the tequila, lemon juice, passion fruit liqueur, passionfruit juice, and vanilla simple syrup into the shaker.
The Dry Shake: Add the egg white or aquafaba. Close the shaker tight. Shake hard without ice for 15 seconds. This “dry shake” builds the foam.
The Wet Shake: Open the shaker and fill it with ice. Shake again for another 15 seconds. This cools the drink and adds a bit of water for balance.
Strain: Use a fine-mesh strainer to pour the liquid into your glass. Straining is vital to remove the raspberry seeds and bits of ice.
Garnish: Drop a few fresh raspberries on top of the foam. Add a lime wedge on the rim.

If the drink feels too tart, add a splash more of the simple syrup. Everyone has a different preference for sweetness. If you use passion fruit syrup instead of liqueur, skip the extra simple syrup at first.
