- 5 fresh raspberries
- ¾ oz fresh lemon juice squeezed
- ½ oz simple syrup
- 1 egg white or ½ oz unsalted aquafaba
- Ice cubes
- Fresh raspberries or lemon zest for garnish
Add raspberries to the shaker and press gently until broken down.
Pour in gin, lemon juice, simple syrup, and egg white or aquafaba.
Shake without ice for 10–12 seconds to build foam.
Add ice and shake again until cold.
Strain into a chilled cocktail glass.
