Ingredients
  

  • 2 oz London Dry Gin
  • 5 fresh raspberries
  • ¾ oz fresh lemon juice squeezed
  • ½ oz simple syrup
  • 1 egg white or ½ oz unsalted aquafaba
  • Ice cubes
  • Fresh raspberries or lemon zest for garnish

Instructions
 

  • Add raspberries to the shaker and press gently until broken down.
  • Pour in gin, lemon juice, simple syrup, and egg white or aquafaba.
  • Shake without ice for 10–12 seconds to build foam.
  • Add ice and shake again until cold.
  • Strain into a chilled cocktail glass.
  • Garnish with raspberries or lemon zest.

Notes

  • Foam settles naturally after a few minutes
  • Aquafaba creates slightly lighter texture than egg white
  • Adjust syrup in small amounts to suit your taste
