Equipment

  • Highball glass (I used a 10-ounce glass)
  • Jigger or measuring cup
  • Bar spoon
  • Citrus juicer or reamer
  • Knife and cutting board
  • Cocktail shaker Optional

Ingredients
  

  • 2 ounces light rum
  • ounces cream of coconut
  • ounces pineapple juice
  • ½ ounce fresh lime juice
  • 2 cups of ice
  • Pineapple wedge for garnish, optional

Instructions
 

  • Fill your glass with ice – about two cups. If you’ve got pebble ice, use it!
  • Measure and mix – Add the rum, cream of coconut, pineapple juice, and lime juice into a cocktail shaker or directly into the glass.
  • Stir or shake – If using a shaker, shake for 10 seconds. The mixture is ill-chilled. If not, stir everything well with a bar spoon right in the glass.
  • Garnish and serve – Add a pineapple wedge or a cocktail umbrella if you’re feeling festive.
