Ingredients

  • 1 oz 30 ml lavender simple syrup (recipe below)​
  • 2 oz 60 ml Prosecco or sparkling wine​
  • 1 oz 30 ml soda water​
  • ½ oz 15 ml freshly squeezed lemon juice​
  • Ice cubes​
  • Garnish: Fresh lavender sprig and a lemon slice​

For the Lavender Simple Syrup:

  • 1 cup water​
  • 1 cup granulated sugar​
  • 2 tbsp dried culinary lavender bud

Preparing the Lavender Simple Syrup:

  • Combine Ingredients: In a saucepan, mix together the water, sugar, and dried lavender buds.​
  • Heat the Mixture: Place the saucepan over medium heat and stir until the sugar dissolves completely.
  • Simmer: Let the mixture simmer for about 5 minutes to allow the lavender to infuse its flavor.​
  • Cool and Strain: Remove from heat, let it cool to room temperature, then strain out the lavender buds. Store the syrup in a sealed container in the refrigerator for up to two weeks.​

Assembling the Cocktail:

  • Chill the Glass: Place your serving glass in the freezer for a few minutes to chill.​
  • Prepare the Glass: Fill the chilled glass with ice cubes.
  • Add Ingredients: Pour the lavender simple syrup, freshly squeezed lemon juice, and soda water into the glass.​
  • Add Prosecco: Slowly pour the Prosecco into the glass, allowing it to mix gently with the other ingredients.​
  • Garnish: Decorate with a sprig of fresh lavender and a slice of lemon on the rim.​
