Equipment

  • Blender (preferably high-speed)
  • Paring knife
  • Measuring cups and spoons
  • Peeler (optional, if you want to peel the apple or cucumber)
  • Glasses for serving

Ingredients

  • 1 medium apple preferably sweet, like Fuji or Gala, cored and chopped
  • 1 medium cucumber peeled and chopped
  • 1 cup fresh spinach optional, for added nutrition
  • 1/2 cup Greek yogurt or non-dairy yogurt for creaminess
  • 1/2 cup unsweetened almond milk or water adjust for desired consistency
  • 1 tablespoon honey or maple syrup optional, for sweetness
  • 1 teaspoon fresh lemon juice for a zesty kick
  • Ice cubes optional, for a chilled smoothie

Instructions

Prepare the Ingredients

  • I start by washing the apple, cucumber, and spinach thoroughly. I chop the apple and cucumber into smaller pieces to make blending easier. If I want a smoother texture, I peel the cucumber, but I often leave the skin on for extra nutrients.

Add Ingredients to the Blender

  • In the blender, I add the apple pieces, cucumber chunks, fresh spinach, Greek yogurt, almond milk, honey (if using), and lemon juice. If Iā€™m craving a colder smoothie, I toss in a handful of ice cubes.

Blend Until Smooth

  • I blend everything on high speed until the mixture is smooth and creamy. This usually takes about 8-10 minutes. If the smoothie seems too thick, I add a splash more almond milk or water to reach my desired consistency.

Taste and Adjust

  • Once blended, I taste the smoothie to see if it needs a touch more sweetness or lemon juice. Adjusting the flavors ensures every sip is perfect.

Serve and Enjoy

  • I pour the smoothie into glasses and serve immediately. The vibrant green color and refreshing aroma make it irresistible!

Notes

Make this smoothie just before serving to preserve its vibrant color and fresh taste. Leftovers can be stored in an airtight container in the refrigerator for up to 24 hours, but the texture may change slightly.
You can swap Greek yogurt with coconut yogurt for a dairy-free version or add a tablespoon of chia seeds for extra fiber and omega-3s.
